Walnut Cake

This recipe won Francisco Castro, Director of Dining Experience at Cornerstone at Milford, the Best Dessert at the 2025 Top Chef Cook-Off! Enjoy a taste of Cyprus with this delicious traditional dish.

Ingredients

Walnut Cake:

  • 4 Eggs (Room temperature)
  • ¾ cup Caster Sugar
  • ¾ cup Cooking oil
  • ¼ cup Full Cream Milk 
  • ⅓ cup All-purpose flour, sifted
  • 1 cup Breadcrumbs
  • 1 cup Desiccated Coconut
  • 2 tsp Baking powder 
  • ¼ tsp Salt
  • 1 tsp Vanilla Essence
  • 1 cup chopped walnuts

Prepare Sugar Syrup:

  • ¾ cup Caster Sugar
  • 1 cup Hot Water
  • ½ tsp Lemon juice

Cream Custard:

  • 750 ML Full Cream Milk
  • 3 tbsp Corn Flour Cornflour 
  • 2 tbsp All-Purpose Flour
  • ½ cup Sugar
  • 1 tsp Vanilla Essence
  • ½ cup Whipping Cream

Optional Garnishes:

  • Desiccated coconut
  • Walnuts chopped
  • Strawberry or Raspberry

Directions

Walnut Cake:

  1. In a bowl, add eggs, sugar & beat well until foamy (approx. 3-4 minutes).
  2. Add cooking oil, milk, and beat well.
  3. Add all-purpose flour, breadcrumbs, desiccated coconut, baking powder, salt, vanilla essence and beat until well combined.
  4. Add walnuts and fold with the help of spatula.
  5. In a greased baking dish, add prepared batter, spread evenly, and tap a few times.
  6. Bake in a preheated oven at 220°F for 30 minutes (on lower grill).
  7. Take out cake from the oven, and let it cool completely.

Prepare Sugar Syrup:

  1. In a jug, add caster sugar, hot water, lemon juice, and mix well until sugar is dissolved.
  2. Poke holes all over the cake with the help of a wooden skewer and drizzle over the cake
  3. Garnish with desiccated coconut, chopped walnuts and either chopped strawberries or raspberries

Prepare Cream Custard:

  1. In a saucepan, add milk, cornflour, All purpose flour, Sugar, Vanilla Essence, & whisk well. Turn on the flame, mix continuously & cook on low flame until desired thickness.
  2. Transfer to a bowl, let it cool & refrigerate for 2 hours
  3. Now add whipping cream and beat for 2-3 minutes. Pour prepared cream custard all over the cake.
  4. Sprinkle with desired garnish & refrigerate for 2-3 hours.
