Ingredients
1 cup Brown Rice and Quinoa blend (cooked)
1 cup Heavy cream
1 cup nonfat Vanilla Greek Yogurt
1/2 cup Dried pineapple
1/2 cup Dried Cherries
1/2 cup Diced fresh Apple
1/4 cup Slivered Almonds, toasted
1 teaspoon Cinnamon Maple Sprinkle OR (¾ teaspoon cinnamon, ⅛ nutmeg)
1 oz Pure Maple Syrup
Directions
1. Bring the cream and maple syrup to a simmer.
2. Add the Brown Rice and Quinoa, and stir until mixed, about 10 minutes
3. Toss the dried fruit, apples, and toasted almonds in the cinnamon maple sprinkle
4. Combine the quinoa blend and fruit and nut mixture together and chill for an hour or overnight.
5. Mix in the Greek yogurt, and top with more dried fruit and nuts, and serve.
Notes:
You can change up which fruits or nuts you want to use, adding different flavors as well, add fresh ginger, fold in mandarin oranges, chocolate chips, or even granola works too.
