Chili Rice Pot

Ingredients

  • 1 cup prepared brown rice
  • 1 cup black beans, drained and rinsed 3 times to remove 30% of the salt. OR, cook your own black beans and avoild 95% of salt!
  • 8 oz. tomatoes, diced
  • 3 T minced, dried onion
  • 1 cup Water
  • ½ tsp chili powder
  • ½ tsp oregano
  • ½ tsp ground cumin
  • ½ TSP cinnamon

Directions

  1. Combine all the ingredients in a saucepan over medium heat
  2. Cover and cook on low for 15-30 mintutes, until the rice is cooked.
  3. Stir and serve hot.

Yield: 2 servings

Preparation Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes
