Croatian Roast Pork

This recipe won Chef Lee Colon, Director of Dining Experience at Methuen Village, the Taste & Appeal Award at the 2024 Top Chef Cook-Off! Enjoy a taste of Croatia with this delicious roast pork.

Ingredients

  • 5 lbs pork legs
  • 1 cup beer
  • 1 1/2 cups vegetable oil
  • salt to taste

Directions

  1. Preheat the oven to 425°F.
  2. Wash the pork leg and season lightly with salt.
  3. Score the skin, making a crosswise pattern.
  4. Place a layer of foil on top of a large baking sheet. Grease the foil before placing the pork leg on the sheet.
  5. Pour the oil into a medium saucepan and heat through.
  6. Carefully pour the hot oil onto the pork. Place the pork in the oven.
  7. After 15 minutes of baking, reduce the oven temperature to 365°F. Take out the pork and pour 1/3 cup of the beer on top before returning it to the oven.
  8. After approximately 1.5 hours, pour over another 1/3 cup of beer.
  9. After another 30 minutes, pour over the final 1/3 cup of beer.
  10. Increase the oven temperature back to 425°F.  Let bake another 20 minutes or until the internal temperature of the meat reaches at least 145°F.
  11. Remove from the oven and let rest for at least 15 minutes before carving. Enjoy!
