Lentil Stew

Ingredients

  • 1 cup lentils, raw
  • 2 large carrots, thinly sliced
  • 2 small celery stalks, chopped
  • 1 large onion, chopped
  • 3-5 cloves garlic, crushed
  • 1 T Extra Virgin Olive Oil
  • 5 ½ CUPS chicken stock
  • 1 Can Italian tomatoes, crushed (1 oz.)
  • ¼ TSP ground cumin
  • 1 TSP coriander seeds
  • ½ TSP cinnamon
  • ½ TSP red dulse flakes
  • 2 TSP black pepper
  • 3 T Balsamic vinegar

Directions

  1. In a saucepan over medium heat, combine all the ingredients and cook for 30 mintutes, until all the ingredients are soft.
  2. Vary the recipe by adding 1 cup of cooked brown or red rice during the last 5 minutes of cooking.

Yield: 4-6 servings

Preparation Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes
