- Handful of Fresh Mint leaves (save some for garnish)
- 1 Lime sliced and cut into quarters (save one slice for garnish)
- 1 TBSP of Agave syrup or Coconut sugar
- 2 oz of White Rum
- Ice cubes
- Sparkling water
- Place the mint leaves, lime and agave or coconut sugar in a tall glass and muddle.
- Top off with ice cubes and pour in white rum.
- Pour in sparkling water almost to the top.
- Garnish with the extra slice of lIme and fresh mint leaves.
