Cranberry Bread with Orange Glaze

Ingredients

Cranberry bread:

  • 2 cups flour
  • 1 cup sugar
  • ½ tablespoons baking powder
  • ½ tablespoons baking soda
  • 1 teaspoon salt
  • 1 egg, beaten
  • 2 tablespoons butter, melted
  • the juice and rind of 1/2 orange
  • ½ cups nuts (chopped)
  • 1 ½ cups cranberries (coarsely chopped with a knife or food processor)

Orange glaze:

  • ¼ cup powdered sugar
  • 1 teaspoon freshly squeezed orange juice
  • ½ teaspoon orange zest, reserved from orange above


Directions

For the loaf:

  1. Preheat the oven to 350°F and grease a 9x5x3 loaf pan.
  2. Pour the orange juice and rind into a glass measuring cup and add 1 1/4 cups boiling water. Stir and set aside.
  3. Mix the flour, baking powder, baking soda and salt together in a medium bowl and set aside.
  4. Mix the sugar, egg, and butter together in a large bowl until just combined. Discard the orange rind from the orange and water mixture and mix in the remaining liquid.
  5. Add in the dry ingredients and mix. Fold in the nuts and cranberries.
  6. Pour the batter into the loaf pan and let stand for 20 minutes.
  7. Bake the loaf for 50-65 minutes or until an inserted toothpick comes out clean.

For the glaze:

  1. As the loaf cools, make the orange glaze.
  2. Combine the orange juice, zest, and sugar and stir until the sugar has dissolved.
  3. Add more sugar if the glaze is too runny or add milk or water if it is too thick. Stir until the desired consistency is reached.
  4. When the loaf has cooled, spread the glaze evenly on top and enjoy!

Yield: 1 loaf

Preparation Time: 15 minutes

Cook Time: 50-65 minutes

Total Time: 65-80 minutes
