Ingredients
Cranberry bread:
- 2 cups flour
- 1 cup sugar
- ½ tablespoons baking powder
- ½ tablespoons baking soda
- 1 teaspoon salt
- 1 egg, beaten
- 2 tablespoons butter, melted
- the juice and rind of 1/2 orange
- ½ cups nuts (chopped)
- 1 ½ cups cranberries (coarsely chopped with a knife or food processor)
Orange glaze:
- ¼ cup powdered sugar
- 1 teaspoon freshly squeezed orange juice

½ teaspoon orange zest, reserved from orange above
Directions
For the loaf:
- Preheat the oven to 350°F and grease a 9x5x3 loaf pan.
- Pour the orange juice and rind into a glass measuring cup and add 1 1/4 cups boiling water. Stir and set aside.
- Mix the flour, baking powder, baking soda and salt together in a medium bowl and set aside.
- Mix the sugar, egg, and butter together in a large bowl until just combined. Discard the orange rind from the orange and water mixture and mix in the remaining liquid.
- Add in the dry ingredients and mix. Fold in the nuts and cranberries.
- Pour the batter into the loaf pan and let stand for 20 minutes.
- Bake the loaf for 50-65 minutes or until an inserted toothpick comes out clean.
For the glaze:
- As the loaf cools, make the orange glaze.
- Combine the orange juice, zest, and sugar and stir until the sugar has dissolved.
- Add more sugar if the glaze is too runny or add milk or water if it is too thick. Stir until the desired consistency is reached.
- When the loaf has cooled, spread the glaze evenly on top and enjoy!
