Ingredients
- 1 cup lentils, raw
- 2 large carrots, thinly sliced
- 2 small celery stalks, chopped
- 1 large onion, chopped
- 3-5 cloves garlic, crushed
- 1 T Extra Virgin Olive Oil
- 5 ½ CUPS chicken stock
- 1 Can Italian tomatoes, crushed (1 oz.)
- ¼ TSP ground cumin
- 1 TSP coriander seeds
- ½ TSP cinnamon
- ½ TSP red dulse flakes
- 2 TSP black pepper
- 3 T Balsamic vinegar
Directions
- In a saucepan over medium heat, combine all the ingredients and cook for 30 mintutes, until all the ingredients are soft.
- Vary the recipe by adding 1 cup of cooked brown or red rice during the last 5 minutes of cooking.
Yield: 4-6 servings
